

With the help of Jose aka MooseKnuckles, I bottled the Wit into 46 12oz dark bottles. It took 10 weeks but I hope my patience pays off. Can't wait to label.

Finally moved the Wit to secondary and had a sample of the Dubbel. Gotta say it gave me a good buzz and it was was pretty tasty.
I've also decided on the name for the Dubbel, it shall now be known as Four Hundred Boys Double Ale. Named after the Four Hundred Boys, mayan deities of alcohol. Their Quiche name is Omuch' k'ajolab'.
They attempted to kill Zipacna, maker of the earth and characterized as a caiman, but are killed by him instead, eventually becoming Motz, the Pleiades. They died in a drunken stupor.
Zipacna was later taken out by our heroes, The Hero Twins, Hunahpu and Xbalanque.

Brewed some Belgian-style wit (white) beer last night.
Malt Extract: Wheat 6 lbs.
Grain Bill: CaraPils 7 oz & Belgian Aromatic 1 oz
Hops: Perle (8.5%) .45 oz & Saaz .5 oz
Extras: Coriander .5 oz, Bitter Orange Peel .5 oz & Corn Sugar .5 lbs.
Yeast: Wyeast 3944 Belgian White

Finally bottled the Belgian Dubbel. Thirty-three 12 oz. bottles and six 32 oz. flip-top bottles. Thanks Oscar. Yr a true homie, but yr probably just thirsty.
Berry Christmas Eve!

Happy Winter Solstice! What a way to begin the winter.
Los Compadres Brewing Club's first official meeting started with brewing a Belgian Dubbel. Thanks again to Oscar and Joaquin for their assistance. We sipped on the 3-week old Berry Christmas JPA and Mazon's Oatmeal Stout Cerveza.

I don't know if I would be able to wait that long but I hear that up to these many months is ideal.

Thanks to my compas for their "hands-on" help this time. They're always around for moral support but this time they came through to put in some real work.

Today is Sofia's 4th birthday and to celebrate I moved the wort from the 1st fermenter to the glass carboy.
Two more weeks to go.

Patience, patience, patience.

Today was the first day of brewing my second batch. I went to the store earlier in the day to buy the main ingredient for this beer, juniper berries.
After 3 hours of watching water and wort boil we finally threw it into the first fermenting bucket. Next Sunday I move it to the glass carboy.

The idea for the logo came from two things: the quetzal, Guatemalan national bird, and the German coat of arms.

I was as happy as the day Sofia and then Santi were born.

At least the label is ready.
The concept for the label came from the flag of where we came from, Guatemala. As well as the Bavarian flag, from where my German ancestors were from. The trees are ceibas, sacred tree of my Mayan ancestors and national tree of Guatemala. They are the trees that stand in the middle of the earth, connecting the terrestrial world to the spirit-world above.

Tamale pots are good for brewing too!

Finally decided to buy the ingredients. It's on.
